A French table in North Wales
Bob and Barbara Ross opened Paysanne with a love of Elizabeth David and simple, provincial French cookery. Bob kept the glasses topped up with wines sourced directly from small independent French vineyards.
A family restaurant in Deganwy
Paysanne began with a love of provincial French cooking and a warm welcome for regulars and new guests.
“The simple ideals that gave rise to Paysanne in 1988 remain the same today.”
Bob and Barbara Ross opened Paysanne with a love of Elizabeth David and simple, provincial French cookery. Bob kept the glasses topped up with wines sourced directly from small independent French vineyards.
When Bob and Barbara retired to South West France, their son Cai took over the reins. The connection with France stayed close, with regular dispatches of new bottled discoveries from the vineyards his parents knew so well.
Cai runs Paysanne with head chef David Hughes. More than thirty five years in, the restaurant remains relaxed, generous and rooted in the pleasures of a long dinner.

A little more from Cai
Paysanne is a place for friends, family, good food and conversation. The room is informal, and the cooking stays close to the French country style that shaped the restaurant.
Alongside the restaurant, Cai has also written about the flavours of North Wales. His book North Wales: Fish & Seafood celebrates the people and produce of the region.
